Here are the recipe links: Cucumber Cream Cheese Stacks I got the idea from this, but all I actually did was salt some cucumbers, put full fat cream cheese in them, and squish them together. Light and tasty.
Lemon Coconut Cheesecake Bites I made these in the bigger silicone pan that I had, and they tasted delicious.
They just need to be kept frozen, as they are very gooey at room temperature (or at least on a hot day).
For the other small bites, I skewered fresh mozzarella balls with a basil leaf and either an olive (for me) or a grape tomato (for my guests).
